Is it just me, or does one phase increase in voltage when the other decreases? I believe that this suggests a problem with the Neutral line.

It look like what you say is occurring but I do not know a lot about how electricity works.
If there is an issue with the neutral what Is the repair needed to correct it?

I think it is a power company issue but need Sparkies to Chime in and give their, more knowledgeable, opinion.

Assuming your Sense monitor is installed near the power entrance to your home as it should be, I don’t think this is a neutral problem given how gradual it is. I think it’s something goofy with the step-down transformer feeding your home, like overheating and/or saturation (overload), possibly due to unbalanced industrial type machinery. You got a neighbor with a serious hobby, or maybe a last name of Frankenstein?

The transformer may simply be failing with age and even normal mid-day loads are too much for it. It’s rough out there on top of a pole.

I’d call the power company and show them your data. Depending on the type of meter you have, they may be able to confirm your data with their own. Please let us know the outcome, I’d like to learn from it.
