I am about to replace my Reliance 6-50-EORT 100 hot water heater with a APHWC501M - LG Inverter Heat Pump Water Heater. I currently have my water heater hooked up using the Current Sensors. When I replace the heater should I do anything? Will the sense meter just recognize it is a different model and auto adjust?
You do not need to do anything. Current clamps measure usage directly so there is no model to adjust. You are welcome to rename the device for your own benefit.
Will sense help me see the change in energy use with switching appliances? What about the estimated yearly cost will it still take into account the earlier higher use?

If Sense picks up your new water heater and if you have the energy costs relatively well dialed in, you’ll be able to compare the historic costs vs current for similar time periods for Water Heater 1 vs.Water Heater 2. It will require a little manual work looking through (probably) monthly usage / estimated cost for both devices.
As for yearly costs estimates for specific devices, that’s all based on past history. Not sure how much history is needed for a new device like your new water heater. I did notice one interesting difference for the yearly estimate for two of my similar devices.
My downstairs furnace blower uses more power when on, but usually comes on less frequently during the summer (AC) bases the yearly estimate on “last season”.
My upstairs furnace blower that uses less power when it is on, but comes on more frequently during the summer (AC) uses “your usage” to estimate yearly usage.
